Geranium in Copenhagen wins top spot on World’s 50 Best Restaurants 2022 list

(LONDON) — Chefs, restaurateurs, sommeliers and diners woke up to some exciting culinary news on Tuesday as the list of the world’s 50 best restaurants crowned Copenhagen-based Geranium its newest winner.

The list is produced annually by William Reed Business Media of the UK and based on a survey of international chefs, restaurateurs and critics.

“Geranium invites customers to taste nature while simultaneously observing it around them. The locally inspired, seasonally changing ‘Universe’ tasting menu takes place over a minimum of three hours with approximately 20 courses evenly split between starters, savory entrees and sweets,” World’s 50 Best wrote in its description. of the winning restaurant.

Geranium’s chef and sommelier duo, Rasmus Kofoed and Søren Ledet, who operate out of the iconic eighth-floor restaurant in central Copenhagen, overlooking Fælledparken, reached the pinnacle of their careers on Monday night when they received the top prize.

Both have been praised for their “constant reinvention and innovation”.

Moments after the win – which dethroned Copenhagen-based René Redzepi’s Noma – Kofoed, who runs kitchen operations, told the World’s 50 Best: “It’s everything we could dream of.”

“Last year, especially after the confinement when we reopened Geranium, we completely changed the menu and it was very difficult to change everything. I said goodbye to signature dishes… but felt a lot of freedom,” Kofoed said.

“It’s been a great journey with the team so that we can all have a great experience,” he added, speaking directly to his “loyal and dedicated” squad in Copenhagen.

Ledet, who manages the reception, wine and beverage service, added that this year marked the duo’s 10th appearance at the invitation-only awards ceremony.

“When you’ve been here as many years as we have, every year is so amazing to meet everyone from across the industry and the friends we’ve gained, but to finally be where we are tonight is such an amazing experience. , ” he said.

The geranium has an already impressive history. In 2016, it became the first Danish restaurant to win three Michelin stars.

It also won the Art of Hospitality award for the World’s 50 Best Restaurants in 2018, which this year went to New York husband-and-wife team Junghyun ‘JP’ and Ellia Park of 14-seat hotspot Atomix. located in Manhattan near Koreatown. .

The groundbreaking Korean restaurant won 33rd place on this year’s overall list and was one of only three American restaurants selected, along with Le Bernardin in New York and SingleThread in Healdsburg, California.

In 2022, Kofoed made Geranium a “meat-free zone” to focus only on local seafood and organic vegetables from biodynamic farms in Denmark and Scandinavia. Artful creations from the “Spring Universe” menu are served on nature-inspired dishes and include items such as lightly smoked lumpfish roe with milk, kale and apple, and forest mushrooms with beer, smoked egg yolk, pickled hops and rye bread.

The wine list focuses on low-handling labels to complement Kofoed’s food, and the drink menu offers unique and refreshing juice pairings with creations like rhubarb with geranium and carrot.

The 20th edition of the annual World’s 50 Best Restaurants list was curated with the help of a 1,080-person panel of culinary experts, who provided an audited vote on top destinations for unique dining experiences .

The annual tally is considered by some to be a barometer of global food trends.
